The Best Red Velvet Brownies
I got a new bed this week. A new mattress as well. I ordered one of those organic Nest mattresses. It came in a giant box, weighing 130lbs. The mattresses are rolled and air sealed so they can ship directly to you. The Fed Ex driver slid it up my doorstep and it took me 30 minutes to get it from the door to the bottom of my staircase. I meannnnnnn. I nearly died trying to get it up the staircase. I had to recruit two guys working in my neighborhood to help me carry the box up. Needless to say I ate 3 brownies to make up for the intense workout.These are amazing. And so are the Nest mattresses if anyone was curious : ) Recipe below folks.
Red Velvet Brownies
1 (4-oz.) bittersweet chocolate baking bar, finely chopped
¾ cup butter
2 cups sugar
4 large eggs
1½ cups all-purpose flour
1½ teaspoons baking powder
1 (1-oz.) bottle red food coloring
1 teaspoon vanilla extract
1 cup premium white chocolate chips
1/4 cup macadamia nuts (roughly chopped)
(Optional) Cream Cheese Frosting Ingredients
1 (8-oz.) package cream cheese, softened
3 tablespoons butter, softened
1½ cups powdered sugar
1 teaspoon vanilla extract
1. Preheat your oven to 350 degrees and line a 9x9 pan with aluminum foil or parchment paper allowing 2 inches to hang over the sides so you can lift the brownies out once cooled. Lightly grease.
2. In a microwave safe bowl melt the bittersweet chocolate and butter, stirring after 30 seconds each time so as to not burn the chocolate. Allow to cool for 10 minutes.
3. Once cooled, whisk in the sugar and add the eggs one at a time until blended.
4. Add the flour, red food coloring, baking powder, and vanilla. Stir until combined. Pour white chocolate chips and macadamia nuts in and mix./
5. Pour into the bottom of your prepared baking pan and bake for 40 minutes or until a toothpick comes out clean. Do not over cook or the brownies will be dry. Cool completely.
6. If desired you can make cream cheese frosting: Beat together the cream cheese and butter until smooth. Add the powdered sugar and vanilla and continue to beat until creamy. Frost the brownies. Store in refrigerator.
