Baked Chicken Taquitos

We have a new family favorite!
We made these yesterday afternoon and all 20 were gone by 7 PM!
They were this good ... and they were baked, not fried .... and we used whole wheat tortillas.
What!? I know. Crazzzzy.

Baked Chicken Taquitos


Ingredients
2lbs ground chicken
1 small onion
2 garlic cloves
1/4 tsp onion powder
1/2 tsp salt
1/8 tsp ground cumin
1/4 tsp pepper
1 cup cheddar cheese
1/2 cup Queso Fresco
20 small wheat tortillas
Vegetable oil

Directions
1. Preheat your oven to 400 degrees and using a paper towel rub vegetable oil all over a large baking sheet (or use non-stick spray).

2. In a large skillet over medium heat, add 2 tbs vegetable oil and 2 cloves of garlic (run through a garlic press). Let simmer for one minute then add 1 small onion (chopped). Cook 2 minutes then add ground chicken, onion powder, salt, pepper, and cumin. Cook approximately 12-15 minutes until well cooked and browned.

3. Add chicken mixture to each wheat tortilla and sprinkle with cheddar cheese then roll up and place on your baking sheet. Continue rolling all taquitos. It's OK if they all touch on the baking sheet. Using a paper towel wipe a little more oil on the tops of the taquitos.

4. Bake at 400 degrees for 15 minutes until crispy and golden brown on the tops. Sprinkle with Queso Fresco and serve hot with homemade guacamole!
