No Bake Peanut Butter Date Bars

OK, I really want to sell you all on these bars because they are honestly amazing. Like so so amazing. I can't tell you how amazing they are. You have to make them. No sugar, no flour, no eggs. Just dates, peanut butter, vanilla, granola, and topped with dark chocolate and salt. OMG I'm freaking out they are so good guys. And they are easy. I have made them so many times this week. Please do yourself a favor and make these! And please send me a pic!

No Bake Peanut Butter Date Bars

Ingredients
1 1/4 cups of packed pitted dates (about 10 oz)
1 cup Skippy creamy natural peanut butter
2 1/2 tsps vanilla extract
1 cup KIND peanut butter protein granola
Flake salt or Sea salt
6oz Dark chocolate

Directions
1. In a food processor, combine the dates, peanut butter, and vanilla. Pulse until well combined and smooth. About 2-3 minutes.  

3. Add half of the granola and pulse for another 30 seconds only. 

4. Line a 13"x9" or 8"x8" dish with parchment paper and press your batter down into the dish. Use your hand and another piece of parchment paper to smooth out the top. Sprinkle remaining granola over the bars and press down again. 

5. Melt your dark chocolate in a bowl in the microwave at 30 second intervals, stirring in between, until completely melted. Drizzle with dark chocolate and top with sea salt or flake salt. The salt is important! The dates are sweet and the flake salt cuts the sweetness. Do not skip the finishing salt!
